Ingredients:

  • as much fresh cilantro as you can stand, chopped

Directions:

  1. Bring the broth or water to a boil. Add the quinoa and reduce to a simmer; cook for 15 to 20 minutes.

    When the quinoa is tender, remove from heat and drain off any excess water. Cool for a while and mix all ingredients together. Chill for at least 30 minutes before serving to allow flavors to blend.
