This Corn Bean Salsa recipe is just one of a hundred plus salsa recipes we've collected since early 1996. Many of these recipes have been passed down from family member to family member and then shared with friends and then, with Mike Pitzer's Salsa Recipes.
Directions:
- Yesterday we had some friends over and I made my own, even cheaper version of Trader Joe's corn and black bean salsa - it was just as good, maybe better.
- I just dumped a can of whole kernel corn and a can of black beans (both drained, both about 15 ounces) into a bowl with a 12 oz. jar of TJ's cheapest ($1.09) regular salsa, stirred in a couple tablespoonfuls of chopped cilantro and sprinkled a bit more over the top for looks.
- Great success with baked corn chips!
